Hearty 3 Bean Stew
  • 1 large onion (chopped)
  • 3 garlic cloves (chopped)
  • 5 tbsp. oil
  • 4 tbsp. tomato paste
  • ½ tsp. red chili pepper flakes
  • 1 tsp. salt
  • ¼ tsp. black pepper powder
  • 2 small or 1 large bay leaf
  • ¼ tsp. oregano
  • ½ tsp. all spice
  • 2 cups water
  • 1 qt Saffron Road All Natural Classic Culinary Lamb Broth
  • 2 cups water
  • 1 can garbanzo beans
  • 1 can red kidney beans
  • 1 can white beans
  1. Put all beans in strainer, wash well and allow to dry
  2. In a pot brown onions in oil until brown on medium to high heat
  3. Add chopped garlic and continue to stir until onions are dark brown almost black
  4. Add lamb broth, water, tomato paste and spices (red chili pepper flakes, salt, black pepper powder, bay leaf(s), oregano)
  5. Cover and allow to boil on medium heat for approximately half an hour
  6. Add washed beans and carrots and simmer covered for 15-20 minutes on medium to low heat.
  7. Add all spice and adjust salt and pepper to taste.
  8. Serve with grated cheese sprinkled on top and a side of French bread. Enjoy!
