Chicken & Vegetable Rogan Josh

  • 4 tbsp. extra virgin olive oil
  • 1 large onion (chopped)
  • 1 tsp. garlic paste
  • 1 tsp. ginger paste
  • 3 tbsp. tomato puree
  • 3 boneless skinless chicken breast (cubed)
  • ½ red bell pepper (chopped)
  • ½ green bell pepper (chopped)
  • ½ yellow bell pepper (chopped)
  • ½ cup fresh mushrooms (chopped)
  • ½ cup carrots (chopped)
  • 1 pkg Saffron Road's Rogan Josh Simmer Sauce
  1. Brown onions in oil until light brown on medium to high heat. Add garlic and ginger paste and give it a quick stir. Immediately add the tomato puree and simmer for 2-3 minutes covered.
  2. Add cubed chicken breast and carrots and cook on medium heat.
  3. When chicken is almost done add all three chopped peppers, mushrooms and Saffron Road's Rogan Josh Simmer Sauce .
  4. Cover and simmer for 10 minutes on low heat.
  5. Serve with rice and salad of choice and enjoy!
