Lemongrass Basil Ramen

Whip up Lemongrass Basil Ramen for a zesty & comforting meal. This easy recipe combines tender chicken, noodles, and veggies with our flavorful Lemongrass Basil Simmer Sauce, topped with kale and jalapeños. A delightful twist on classic ramen that's both hearty and aromatic.

Ingredients:

  • 1 Chicken Breast
  • Seasonings: ½ tsp each of ginger, garlic powder, black pepper, salt
  • 2 tbsp Olive Oil (divided for cooking)
  • ¼ cup Kale (roughly chopped)
  • ½ Bell Pepper (thinly sliced)
  • ½ Red Onion (thinly sliced)
  • 12 oz Uncooked Noodles
  • 1 Pouch Lemongrass Basil Simmer Sauce
  • 2 cups Broth (chicken, vegetable, or any broth of choice)
  • Garnish: Fresh Jalapeños (sliced), Chili Oil

Directions:

  1. Prepare Chicken:

    • Dice the chicken breast and season with ginger, garlic powder, black pepper, and salt.
    • In a pan, heat 1 tbsp olive oil over medium heat and sear the chicken for 3-4 minutes per side until cooked through. Remove and set aside.
  2. Cook Vegetables:

    • In the same pan, add ½ tbsp olive oil. Sauté sliced bell pepper, red onion, and minced garlic until soft and fragrant.
  3. Prepare Kale:

    • In a bowl, massage kale with the remaining olive oil for 3-4 minutes until flavors are bold.
  4. Cook Noodles:

    • Boil noodles according to package instructions, then drain.
  5. Combine and Simmer:

    • Return the chicken to the pan with the vegetables. Add the cooked noodles, Lemongrass Basil Simmer Sauce, and broth. Mix well and simmer for a few minutes to let flavors meld.
  6. Serve:

    • Top with massaged kale, fresh jalapeños, and a drizzle of chili oil before serving.
